Three-Bean Cassoulet

  • 2 (14.5 ounce) cans stewed tomatoes
  • 1 (19 ounce) can garbanzo beans (chickpeas), rinsed and drained
  • 1 (15.5 ounce) can great northern beans, rinsed and drained
  • 1 (15 ounce) can butter beans, rinsed and drained
  • 1 cup finely chopped carrots
  • 1 cup finely chopped onion
  • 2 garlic cloves, minced
  • 1 bay leaf
  • 2 teaspoons dried parsley flakes
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
 
  1. In an ungreased 3-qt. baking dish, combine all ingredients. Cover and bake at 350 degrees F for 60-70 minutes or until vegetables are tender, stirring occasionally. Discard bay leaf before serving.

Outstanding! Made this in my slow cooker, adding a couple of pounds of pork shoulder, two smoked ham hocks and a little pancetta, on low for 8 hours. Super Bowl party attendees loved it!

Very Good! A cheap, healthy, meatless meal. My whole famiy loved it. I also made it with a little bit of leftover ground sausage we had in the fridge-- a very nice complement to the beans and also adds to the flavor. Will definitely make again- with OR without sausage.

This recipe is quite good! I substituted black beans for northern beans because I didn't have northern beans on hand. It still turned out really well! If you want to add meat to it, I think a little bit of bacon would be excellent. Another addition that would be good would be some canned corn. Very flavorful recipe. I would make it again.
