I made a few substitutions...used navy beans instead of white kidneys...used green onion instead of regular onion..used sesame oil instead of olive oil... and added extra cilantro...this was a hit! My picky 11 yr old LOVED it! She said it reminded her of her favorite cucumber salad from the Thai restaurant...we will definitely make this dish again soon!

Great recipe just as written but as many are inclined to do, I made some modifications to suit my own taste and to simply use what I had on hand: fresh lemon juice rather than vinegar, fresh parsley rather than cilantro, some Sazon seasoning and fresh minced garlic rather than garlic powder - although I'm sure I'd have been pleased with this had I strictly adhered to the recipe. I also added sliced celery and quartered cherry tomatoes, only because I wanted to incorporate as many vegetables as possible. Colorful and delicious and, because it uses fairly basic ingredients, something I find I don't get sick of. I like to make extra so that I have some left to enjoy with my lunch the next day (or two).

Omitted the onion but added a fresh tomato. Doubled the cilantro because I love cilantro. Took this to a bbq and it was a nice compliment to tequila lime chicken. I will surely be making this again. It is a great summer salad. Also, this is best left sitting in the fridge overnight. It taste better the next day.

I really loved this recipe, the vinegar made it a little more tangey than i would like but would just put less in. A great party dish and late night snack, also great with crackers.

This salad has a very fresh taste but is easy to prepare since it uses canned beans. Great Northern beans work as well in this salad as kidney beans plus they are less expensive. In addition to the cilantro, I used lots of fresh parsley....Cider vinegar instead of red wine vinegar plus a couple of tsps of white sugar. Try this as a salsa dip with tortilla chips!

I have made this salad at least 20 times since I first tried it. It is healthy, fresh and tasty. I serve it at bbq's and as a light side for quick meals and I have received many compliments. Absolutely delicious !!

Rather tangy, but it's good. I printed the recipe about a month ago and have already made it three times. It also keeps well. I've eaten it four days after making it, and it still tastes great.
