Italian Sausage Soup
This soup is easy to put together, and the flavor of the spicy sausage is balanced nicely by Great Northern beans, zucchini, fresh spinach, and carrots. Makes a delicious winter supper.

I followed this recipe exactly. I used Italian chicken sausage. This was delicious. My husband and I both LOVED it and are so glad we have leftovers to eat again later this week!

I made a few changes: used chicken broth, red pepper flakes instead of black pepper, chopped a few plum tomatoes. I was very excited because the soup looked great & appetizing. The only problem is only a few people went for it. Those who did... loved it.

love the recipe- but I do it southern style! collards instead of spinach, butter-beans, squash. As long as you use the foundation combo of Italian sausage + broth + tomatoes + greens you are good to go. I literally hunt around for anything veggie that needs to be used up, add whatever canned or frozen veggies I have on hand. I also like to add a glass of red wine, pasta or quinoa, and more Italian seasoning. This freezes well, I freeze it in single servings and take it to lunch when the weather is dreary.

This is so good. I added an extra can of beef broth plus a second can of northern beans. Used frozen chopped spinach and then topped each serving off with dried Parmesan cheese. We're having it again tonight. Only thing I noticed was it takes longer to make than I thought it would, but it's worth the time. This is now a regular meal for us--highly recommend! Update 1/3/11 -- Tonight made it with hot Italian sausage, not mild, and it was so much better with the hot. Before, it was a pleasant soup. Now, outtasight (do people even say that anymore? Mercifully, not often). ;0) Have left out the spinach the last 2 times I've made it; we couldn't really taste it, and don't miss it.

This soup is delicious and is a hit with the entire family! As others had suggested, I added a small chopped onion and used 1/2 mild/sweet and 1/2 hot turkey sausage. Otherwise, I followed the original recipe. This recipe is definitely a "keeper" and will be made on a frequent basis.

We love this recipe. I got my copy from my mother in law and made my own adjustments to satisfy my taste. I used Italian sausage with sweet basil, two cans of sliced tomatoes as well as the stewed tomatoes. 2 tbsp red wine vinegar 2 tbsp Worcester sauce 3 cloves garlic 1 tsp oregans 1 cup mushrooms 2 tbsp sugar 1 bag frozen spinach

I made this soup for dinner last night, and I have to say it is delicious. I made it pretty much the way the recipe is written however, I added chopped onion, chopped fresh oregano and basil, 4 cloves of garlic,and used diced tomatoes as that is what I had available.To give it a little kick I threw in some crushed red pepper, and omitted the salt as others suggested. I also added an extra cup of vegetable broth, in addition to the beef broth. This is definitely a keeper recipe and I look forward to making this many more times.

Awesome base recipe! I really liked this soup. It seems like as long as you use this base of sausage, tomatoes beef broth and beans, then you can put in anything you like. I didn't have the right beans. so I used black beans. I didn't have zucchini or spinach, so I used 2 potatoes, an ear of corn, 2 stalks celery, a large bell pepper, and 1/2 c onion. still great. this time I'm using twice the veggies and broth and tomatoes and 1 lb of sausage and adding a bag of mezzaluna four cheese ravioli. I'm sure that will work too.

What a great soup, it was very good and very filling. I think next time I would add 1/2 can more of the beans. I also sprinkled some parm. cheese over top, and served with hot French Bread

I've made this soup several times and everyone I serve it to loves it. I toss in a handful of farfalle (bow tie) pasta, add about a teaspoon of Italian seasoning, and omit the salt. Other than that I follow the original recipe. Delicious!!

Brilliant! I didn't have italian sausage so made a version using another recipe from this site. The zucchini , spinach and tomatoes make this a great source of veggies too. I skipped the beans but only because I didn't have them - will definitely put them in next time, since I'm sure I'll make it again!

This recipe was easy to make and turned out very nice. I brought this to work for a pot luck and had several people ask me for the recipe. I followed the recipe as written except I added a tad more beef broth.

I made this with half sweet turkey sausage and half hot turkey sausage. I wondered about the flavor combination of turkey sausage and beef broth, but the flavors came together really well in the last 5 minutes. Please be sure to let the soup sit off the heat after the spinach goes in--that's when the flavors meld and the soup flavors really bloom. We don't like mushy zucchini, so I cut mine into 1 inch pieces. Really good, satisfying soup.

I had this soup recommended to me on here. I liked that it used a lot of vegetables I had in the house and the idea of adding spinach on top which I may try on other soups to add in some extra vegetables. But, I did not care for how salty it seemed from the broth and for the sausage. But, I have never liked soup with sausage, even at the restaurants, so it may just be personal taste. I wasn't going to add it, but other people were going to be eating it. I think I may have liked it more without the meat, a low sodium broth, and a little pasta.
