Browned ground beef is combined with canned pinto beans, tomatoes and whole corn kernels in this soup seasoned with picante sauce and cumin. Serve topped with grated cheddar cheese.

  • 2 pounds ground beef
  • 1 onion, chopped
  • 1 (14.5 ounce) can peeled and diced tomatoes
  • 1 (15 ounce) can pinto beans, drained and rinsed
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 4 potatoes, cubed
  • 1 cup medium salsa
  • 2 cups water
  • 1 teaspoon ground cumin
  • salt to taste
  • ground black pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 cup shredded Cheddar cheese
 
  1. Cook ground beef and onion until done.
  2. In a large pan add beef, onion, tomatoes, beans, corn, potatoes, picante sauce, water, cumin, salt and pepper to taste, and garlic powder. Simmer, covered, for 45 minutes. I like to use slow cooker and let it simmer all day. Serve; top with cheese.

what a great, hearty soup! my husband and i both loved - so did our 1 year old :o) so easy to make & you get a big pot of food that will last a while! i didn't have any salsa so i just put in a can of campbell's vegetable beef soup i found in my pantry plus the extra can of water it calls for. so good with cheddar cheese sprinkled on top! next time we'll add a little sour cream too. yum! thanks!! :o)

This recipe was really just ok. I think it would be a good base to begin with but it's little on the bland side. Next time I'll try adding in some other veggies/ingredients.

This was so good! I doubled the recipe and the only I changed was using half beef and half turkey. I put it in the crock pot early and it we ate off of it for two days.
