Chicken Tortilla Soup I
This soup is quick to make, flavorful, and filling! Serve with warm corn bread or tortillas. This also freezes well. Garnish with chopped fresh avocado, Monterey Jack cheese, crushed tortilla chips, or green onion!

Super yummy and simple. I used pork just because that's what I had and it was great! I did add cumin and cinnamon, because I just can't imagine Mexican food without those two flavors. Oh and to those that omitted the oregano, it is very common to use oregano in traditional Mexican and other Latin American foods so don't leave it out! :)

This was very good; thanks for a great recipe. I made this in a slow cooker - just dumped it all in (except for the hominy) and served with tortilla chips and chopped avacado ... yum :)

This was great I doubled recipe & added more garlic @ 1 sqeezed lime, I also left out the hominy because we are in Austin TX & have never heard of it being made that way but both my girls & my husband ATE IT UP! I will keep this one & make it again & again.

Absolutely loved this recipe! I dont like beans, so I threw in some fresh spinach & zuchini. To make it easier- I got 2 roasted chickens from the store instead of preparing the chicken myself. I liked the rich flavor of the roasted chicken. Only other change I made was to sneak in a bottle of Honey Brown Beer to the stock! It was delicious!

AMAZING! my boyfriend could not stop raving about it and wanted more! i did use cumin instead of oregano like others suggested and a one 14.5 ounce can of chicken broth. so delicious! i can't wait to make more!

Amazing! But...I used 3 cans of chicken broth instead of water, canned corn, no hominy (even though I love it), light kidney beans instead of black (for no particular reason), and instead of chicken breast I used all the meat from a rotisserie chicken. Yummy !

I made this tonight and it was VERY good! I will definitely make it again. I used the tips given in JENNANTHONY99's review from Jan. 12, 2004. I live in San Antonio where Chicken Tortilla Soup is served everywhere and this recipe is equally as good as some of my favorite restaurants. The only things I did differently were to use 4 chicken breast instead of 2 and I added drained & rinsed pinto beans and omitted the hominy. Next time I might try adding some Mexican oregano just out of curiosity.

My family and I loved this soup. Really the only change I made is that I sauteed the chicken in the olive oil with the onions and garlic. I added the other ingredients and let it simmer for about 40 minutes. At the table, we just crunched up some corn tortilla chips on top of our bowls, which was delicious. I will definitely make this again.

After reading the reviews I went with the following suggested changes and this soup was fantastic with little effort. Saute diced chicken in olive oil with 5 cloves of fresh minced garlic and the chopped onion. I transferred this mixture to a crock pot and added 1/2 tsp chili powder, substituted 1 tsp cumin for the oregoano, tomatoes, 1 14.5 oz can of chicken broth, 1 chicken buillon cube, 2 cups of water, 1 can of corn (drained), 1 can chopped green chilis, 1 can of rinsed/drained black beans, 1/4 c cilantro. I let this simmer for 3 hours and served it topped with the chips, cheese, avacado and green onions.

Amazing soup! I did it as a main dish for dinner and everybody loved it! I added extra water since it looked more like a stew but overall... AMAZING! Definitely a do!

Delicious! I made it 100% organic with the exception of the hominy. I originally was considering doing rice or quinoa instead of hominy, but the woman at Whole Foods insisted that not using hominy would severely alter the consistency! I did use diced tomatoes instead of crushed, and used flax tortilla chips. Yummmm!

so far i have only made this once but i read almost every review (like i always do) so i could get some hints to make this great. i added cumin but still kept the oregano (i didnt think it was too much). didnt add hominy but i will next time just to see what it adds since i love it. i added a couple more cups of chicken broth because i like my soup thinner. i didnt add crushed tortilla chips because that would have just made the soup thick but served the baked Tositos Scoops instead of using a spoon. it was GREAT! i chopped up some jalepenos to garnish along with adding sour cream, lime wedges and more cilantro. i may have changed a lot but this was an amazing soup. i looove All Recipes!!!
