Warm up winter with this deliciously easy tomato and butter bean soup.

  • 1 cup finely chopped celery
  • 1 cup finely chopped carrots
  • 3/4 cup finely chopped onion
  • 3 tablespoons vegetable oil
  • 3 tablespoons all-purpose flour
  • 4 cups water
  • 2 (16 ounce) cans BUSH’S® Butter Beans, drained
  • 1 (14 ounce) can diced tomatoes
  • 1 teaspoon basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
 
  1. In large pan, cook celery, carrots and onion in oil until soft. Add flour; cook and stir for 1 minute. Gradually add water, stirring until smooth.
  2. Add remaining ingredients; bring to a boil. Reduce heat; simmer for 20 to 25 minutes or until slightly thickened.

Soup was good but bland so i added garlic/onion powder, parsley tsp or more or to taste -more pepper & 1-2 tbsp chicken soup base again according to taste and a cup of chopped green pepper. I will make again but will use chicken broth instead of water which will help with the taste.

Outstanding! I am on Dr. Joel Furhman's "Eat to Live" diet and this recipe makes boring beans a wonderful food. I like the crisp celery and carrots. Just right. Sometimes I add lemon or worchestershire sauce at the table for a little more zip.

This has very good taste, but still wasn't a hit with my family. I may make it again once a year or so.
