Traditional Black Beans and Rice

Serve this mix of black beans, tomatoes, onions, green pepper and rice with your favorite Mexican dish.

  • 1 tablespoon olive oil
  • 3/4 cup finely chopped onion
  • 1/2 cup finely chopped green pepper
  • 1 cup diced tomatoes
  • 1 (15 ounce) can BUSH'S® Black Beans, drain and reserve juices
  • 1/2 teaspoon thyme
  • 1 teaspoon garlic salt
  • 3 tablespoons cider vinegar
  • 1/2 teaspoon hot pepper sauce
  • 2 cups cooked rice
  • Lime wedges (optional)
 
  1. In large skillet heat olive oil; cook onion and green pepper until crisp tender; stir in tomatoes, beans, thyme and garlic salt, cook 3 minutes; add vinegar, pepper sauce, and reserved juices continue to cook 5 minutes.
  2. Serve over rice. Garnish with lime wedge (optional).

I use a 4.5 oz can of chopped green chili's in place of the green pepper. I use a 14.5 oz can of diced tomatoes drained in place of raw.I cook it down about 20min. we serve it over Lundberg wild blend rice (gluten free).

Of all the black beans & rice recipes I've made, I like this the best. I think the cider vinegar is the secret to this dish. It gives it a fresh taste.

I have been making this recipe for at least 6 years since first finding it on this website. I always add an extra can of black beans and use a full can of petite diced tomatoes for the tomatoes it calls for. We LOVE it! Made a very large batch for a vegan dinner party once, and they all loved it, too. Many thanks for one of my favorite recipes!
