White Chicken Chili

  • 3 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1 (4 ounce) can chopped green chiles, drained
  • 3 tablespoons all-purpose flour
  • 2 teaspoons ground cumin
  • 2 (16 ounce) cans BUSH'S® Great Northern Beans
  • 1 (14.5 ounce) can chicken broth
  • 1 1/2 cups finely chopped cooked chicken breast
  • Shredded Monterey Jack cheese (optional)
  • Sour cream (optional)
  • Salsa (optional)
 
  1. In large skillet, cook onion in oil for 4 minutes or until transparent. Add chilies, flour and cumin; cook and stir for 2 minutes. Add beans and chicken broth; bring to a boil. Reduce heat; simmer for 10 minutes or until thickened. Add chicken; cook until hot.
  2. Garnish with cheese, sour cream and salsa, if desired.

Instead of the green chiles, I used Ro-Tel brand Diced Tomatoes and Green Chilies. I used Original but there are other varieties, some of which are spicier. Using the Ro-Tel added some diced tomatoes in there without making it red. You could always add in a few chopped green chiles as well. The Ro-Tel brand is found in Texas and probably other areas as well.

I can't remember how many times I've made this wonderful, and very easy chili. Never once have I felt the need to alter the recipe. It is so quick to make! Once people get over their initial fear, they love it. Print copies of the recipe when you make this, you'll need them for several people.

I omited the green chiles because I have small kids, but I followed the rest as directed. This is so tasty! I made it for a chili cook off at our church and everyone LOVED it! I should have tripled the recipe!
