Spicy Mexican Salad

This salad couldn't be easier to make; everything - lettuce, tomatoes, cheese, and beans - goes into one bowl and is tossed with a ready-made Catalina salad dressing and tortilla chips.

  • 1 (10 ounce) package chopped romaine lettuce
  • 1 1/2 cups shredded Cheddar and Monterey cheese blend
  • 1 (15 ounce) can pinto beans, drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 2 tomatoes, chopped
  • 1 (16 ounce) package corn chips
  • 1 (16 ounce) bottle Catalina salad dressing
 
  1. In a large bowl, combine the romaine, cheese, pinto beans, black beans, and tomatoes.
  2. Add the corn chips and enough dressing to coat; toss and serve.

Wow! EVERYONE in my family of 5 liked this recipe. The only suggestion from a teen was to use a little less Fritos and to crush them. I made homeade Catalina dressing from this website that was fabulous. Great combo of salty and sweet.....who doesn't love that?!

This was really good and easy. I added ground turkey (cooked w/ taco seasoning), green onion, jalapenos, corn, and dark red kidney beans instead of pinto beans. I only made these changes to use up some stuff I had. I didnt have catalina so instead I made a dressing I found on here called "easy southwestern salad dressing", which consists of ranch dressing and BBQ sauce. It turned out great. Next time I will make sure I have catalina because that is my favorite dressing.
