Serve on crusty wholemeal rolls or pita bread, with lettuce and tomato. Other raw, chopped vegetables can be substituted for the celery. Your favorite salad dressing can be substituted for the mayo.

I added a lot to this recipe.. added 1 tsp mustard, 1 extra T mayo, 1/2t curry powder, 2T organic sweet relish, and a pinch of paprika. Also added some raisins. Was absolutely AMAZING. Served on toasted whole-wheat bread, but would be excellent on pita bread. UPDATE: After sitting in the fridge for a couple of days, it tastes even BETTER.

This was pretty good. I did add one large chopped garlic dill, a teaspoon garlic powder and one chopped organic hard boiled egg. I did not use the whole onion, just a few green onions. My littlest loved this, too, believe it or not. I was shocked. I spread his on Dave's Killer Bread but I had mine spread on cucumber slices. NOTE: I used olive oil mayonnaise and I did need an extra tablespoon. Next time, I might add a little dijon and a few shakes Frank's Hot Sauce. I also used organic garbanzo beans.

This is pretty good. I know this sounds weird, but to me it tastes like egg salad! LOL. Obviously it looks like it, and has some similar textures. It is just as satisfying. But I used light veganaise instead of real mayo. Overall, a very good vegetarian sandwich filling. If you are looking to branch out from the good ol veggie burger.

Using green onions adds a great flavor. If you use veganaise, this is a great vegan recipe. I spread my sandwhich mixture onto two pieces of bread, put a slice of cheese on top, and put it under the broiler until the cheese melted. Tasted like a tuna melt :)

This was really good! Used a 14.5 oz can garbonzo beans and used a heaping tablespoon of mayonnaise and followed recipe as is. Also for added flavor added tablespoon dill relish, garlic salt, pepper, & onion powder. Will make this one again!

Totally delish! Made this as a light supper with a bowl of soup, and I had PLENTY of leftovers. Midnight snack, breakfast, and lunch for the next day! I added a bit of greek seasoning, and more mayo, and it was gobbled up!

Not sure what I did wrong but this was not very good, the chickpeas were very grainy, but if I could have got the texture right the flavors were good.

The options are endless on this one! I just used green onion and it was still pretty good. I am looking forward to trying it the actual celery and onion it calls for! A very economical meal too!

Yummy alternative for vegetarians! I substituted carrot for the celery and green onion instead since that's what I had on hand. I imagine celery & onion are great too. Haven't even eaten it yet (made it for lunch tomorrow) and already know I'm in for a treat!

I love this sandwich spread. It's not only just for sandwiches. For breakfast, I make toast and top it with this. So good. The first time I made the recipe as is. Since then I've mixed it up some. Instead of mayo, I use plain Greek yogurt and add some chopped dill pickle. For my own tastes, I only use a 1/4 onion. Definitely a keeper.

AWESOME!!!! I added a little dijon, a few raisins and cayene pepper. I absolutly loved the crunch of celery. I am so excited I found another use for chickpeas other than hummus!

Amazing dish. Just like tuna fish salad. I took it to my parents house and everyone loved it. That's says a lot considering they aren't usually keen about my vegetarian dishes. I used light miracle whip instead of mayonnaise (personal preference). Thank you for this recipe!

Absolutely wonderful! The perfect egg salad substitute for someone who's egg intolerant. I added some cucumber and cherry tomatoes from the garden to freshen it up a bit. Will switch to a sweeter and milder onion next time (maybe scallions instead). The mayo amount is just enough to bind it without making the mix heavy, and the citrus gave it good summery tones to keep the chick peas from being too cloying. I'll be making this all summer!
