Seven Layer Taco Dip

I am continuously asked to bring this dip for parties and family get-togethers. People gather around the platter until it's gone. Five layers of Mexican-inspired delights are topped by a layer of vegetables, then smothered in cheese and garnished with black olives. The vegetables may be varied according to taste.

  • 1 (1 ounce) package taco seasoning mix
  • 1 (16 ounce) can refried beans
  • 1 (8 ounce) package cream cheese, softened
  • 1 (16 ounce) container sour cream
  • 1 (16 ounce) jar salsa
  • 1 large tomato, chopped
  • 1 green bell pepper, chopped
  • 1 bunch chopped green onions
  • 1 small head iceberg lettuce, shredded
  • 1 (6 ounce) can sliced black olives, drained
  • 2 cups shredded Cheddar cheese
 
  1. In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
  2. Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
  3. Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

I made this for a dinner party last week and it was a HUGE hit. I thought it had made way more than we needed but by the time dinner came around, there was only a little bit of this left! I used 1/2 the packet of taco seasoning for the re-fried beans and the other 1/2 for the sour cream layer. I also didn't use the entire container of sour cream, only about 2/3. I omitted the tomato since the salsa seemed to be more than enough and also cut back on the lettuce and olives. I didn't have a 9x13 dish to put this in so I used a 9x9. I thought it might be too thick but people just scooped it out on to appetizer plates and devoured it :) Served with Tostito's scoops. I'm planning to make this for another party this weekend and am going to try adding in a layer of guacamole as other reviewers suggested.

Even better the next day! If I made it again I might use less sour cream/cream cheese mix, and maybe a little less taco seasoning, but over all a very pretty presentation in a glass bowl.
