Garlic-Lime Grilled Chicken Breast

Red peppers and yellow corn create a colorful, flavorful relish for marinated chicken. Lime juice and cilantro add tang and freshness.

  • For Marinade:
  • ¼ cup freshly squeezed lime juice
  • 4 cloves crushed garlic
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

  • For Chicken Breasts:
  • 6 6 ounces each skinless, boneless chicken breasts

  • For Corn Relish:
  • 1 cup corn kernels
  • 1 each seeded and chopped jalapeño pepper
  • ¼ cup diced red bell pepper
  • ½ cup chopped cilantro
  • 2 tablespoons freshly squeezed lime juice
  • ½ teaspoon salt

  • 1 can BUSH’s® Black Bean Fiesta® Grillin’ Beans®
 
  1. For Marinade: In medium bowl mix together lime juice, garlic, salt and black pepper. Pour marinade into large plastic resealable bag.
  2. For Chicken Breasts: Place chicken breasts in bag of marinade, shake to coat and refrigerate for 2 hours to overnight.
  3. For Corn Relish: In medium bowl mix together corn, jalapeño pepper, red bell pepper, cilantro, lime juice and salt. Set aside.
  4. Set clean, well-oiled grill to medium heat. When grill is hot, using tongs, place chicken breasts on grill and cook 4-6 minutes per side. Remove chicken from grill when juices run clear or internal temperature reaches 170 degrees F and place on serving platter.
  5. With a spoon, add a layer of corn relish over the top of each chicken breast.
  6. Serve with BUSH’S Black Bean Fiesta Grillin’ Beans.
