Chicken Chili Bean Chowder

This chicken chowder is rich with loads of vegetables and beans.

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 1 rib celery, finely chopped
  • 1 medium carrot, finely chopped
  • 3 cloves garlic, chopped
  • 1 cup chicken, cooked and shredded
  • 2 (16 ounce) cans BUSH’S® Chili Beans, drained
  • 1 (4 ounce) can diced green chiles
  • 1 cup frozen corn, thawed and drained
  • 1 teaspoon ground cumin
  • 4 cups vegetable or chicken stock
  • 2 cups milk, whole or skim
  • 4 tablespoons fresh cilantro, chopped
  • 1 cup shredded Cheddar cheese
 
  1. Heat oil in a 4-quart saucepan over medium heat. Add onion, celery, carrot and garlic. Cook 5 minutes; stir often.
  2. Add all other ingredients except cilantro and cheese. Bring to a simmer and cook 25 to 30 minutes.
  3. Serve topped with cilantro and cheese.
