This chicken chowder is rich with loads of vegetables and beans.

1 tablespoon olive oil
1 medium onion, finely chopped
1 rib celery, finely chopped
1 medium carrot, finely chopped
3 cloves garlic, chopped
1 cup chicken, cooked and shredded
2 (16 ounce) cans BUSH’S
®
Chili Beans, drained
1 (4 ounce) can diced green chiles
1 cup frozen corn, thawed and drained
1 teaspoon ground cumin
4 cups vegetable or chicken stock
2 cups milk, whole or skim
4 tablespoons fresh cilantro, chopped
1 cup shredded Cheddar cheese
Heat oil in a 4-quart saucepan over medium heat. Add onion, celery, carrot and garlic. Cook 5 minutes; stir often.
Add all other ingredients except cilantro and cheese. Bring to a simmer and cook 25 to 30 minutes.
Serve topped with cilantro and cheese.
