Cha Cha's White Chicken Chili

Delicious white bean chili. Cha Cha says: 'It's kinda spicy, so watch out!' Substitute mild green chiles for the jalapenos if you're scared! Use more chicken and cheese as desired.

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, crushed
  • 1 (4 ounce) can diced jalapeno peppers
  • 1 (4 ounce) can chopped green chile peppers
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cayenne pepper
  • 2 (14.5 ounce) cans chicken broth
  • 3 cups chopped cooked chicken breast
  • 3 (15 ounce) cans white beans
  • 1 cup shredded Monterey Jack cheese
 
  1. Heat the oil in a large saucepan over medium-low heat. Slowly cook and stir the onion until tender. Mix in the garlic, jalapeno, green chile peppers, cumin, oregano and cayenne. Continue to cook and stir the mixture until tender, about 3 minutes. Mix in the chicken broth, chicken and white beans. Simmer 15 minutes, stirring occasionally.
  2. Remove the mixture from heat. Slowly stir in the cheese until melted. Serve warm.

I made this for my husband and he loved it!! I omitted the cayenne pepper and jalepeno peppers, used Rotel with mild green chiles instead. I have not tried it because of the diet I follow, but it smelled wonderfu!

Good but not as good as my favorite white chili w/ ground turkey here in AR. Well, both has some similarities. The hubs do like this one more than me though because it has more heat.

Wow! Great Chili! Caution very spicy!! I used on TBSP of the jalapenos, 2 cans of the mild green chilies, 2 cans of beans, 2 med onions, and mounded the cheese on each serving individually. This is a keeper! Oh yeah, I completely omitted the cayenne, for me (and I like spice) it would have been way to hot with the additional cayenne.
