The oven temp is too high! Set at 400 degrees and bake 17 - 20 minutes.
Also, try adding a low sugar vanilla or strawberry yogurt for some extra kick.

Overdone at 20 minutes, fairly bland. Will try with 1/3 cup brown sugar next time.

I really appreciate base recipes like this. This recipe gives you the perfect starting point to get what you want out of a muffin. We chose to add berries and banana, use honey instead of sugar, and use applesauce instead of oil. They are perfect healthy breakfast muffins and we are excited to try lots of new variations!
