Black Bean and Cheese Lettuce Wraps

Lettuce leaves are used to wrap black beans and chives with a tangy brown rice and cheese mixture. Your guests may vary their wraps however the like! This appetizer is fun and easy.

  • 1 (15 ounce) can BUSH'S® Black Beans, rinsed and drained
  • 1/2 cup cooked brown rice
  • 1/2 cup crumbled plain low fat feta or goat cheese
  • 1/3 cup Fat Free Italian salad dressing
  • 1/4 cup chopped chives or green onions
  • 12 large leaves Boston lettuce*
 
  1. Set BUSH'S BEST Black Beans and chives in separate shallow bowls.
  2. Combine rice, salad dressing and cheese in small bowl. Scoop into third shallow bowl.
  3. Set leaves on plate and allow guests to create own lettuce wraps. **
NOTE
* Reduced fat wheat crackers may be substituted. Spoon bean mixture onto crackers just before serving.
NOTE
** To serve pre-made, lay lettuce leaves flat on plate and spoon rice mixture, beans and chives on each.

Really good! Like everyone else, I adjusted the proportions to taste - 1 can beans, 1 1/2 cups rice, 1/4 cup dressing, and only about an ounce of feta. I didn't have any chives, so I'll have to try those next time. I think I'll be using lettuce wraps instead of tortillas from now on!

These felt so healthy to eat and I'm a huge fan of lettuce wraps. I think the Italian dressing was TOO much. Instead, next time I think i'll just do olive oil. The Feta cheese and the black beans were so good though!
