Ten Minute Summer Salad

Garbanzo beans, tomatoes, and olives served over lettuce and topped with feta cheese make for a light summer salad.

  • 1 (16 ounce) can BUSH'S® Garbanzo Beans, rinsed and drained
  • 1 cup halved cherry tomatoes
  • 1 (2.25 ounce) can sliced black olives, drained*
  • 2 green onions, sliced
  • 1/4 cup Italian salad dressing
  • 4 large lettuce leaves
  • 1/4 cup crumbled feta**
 
  1. In a medium bowl, combine BUSH'S BEST Garbanzo Beans, tomatoes, olives, green onions and dressing. Mix well. Spoon salad onto four lettuce-lined plates; top with cheese.
NOTE
* 1/2 cup chopped green pepper may be substituted
NOTE
** Parmesan cheese may be substituted

I love this salad! It is quick and delicious and I never get tired of it. The only change I made was to substitute 2 Tablespoons of low-cal Greek salad dressing for the 1/4 cup of Italian dressing, just to lower the fat.
